21 Day Fix Meal with Brussels Sprouts

My husband went to Father’s Day at OU this weekend, so I thought this would be a good time to try something new!  I’ve made the pork before, but I’ve never attempted brussels sprouts.  In fact, I wasn’t even sure I’d like brussels sprouts.   Well, it turns out I do, so I’ll be making these again for me. I’m not sure my husband would like them.  It was really easy. So, I’m all in!!

I put the brussels sprouts in the pyrex, drizzled olive oil over them, and sprinkled with lemon pepper.  I baked them at 400 for about 40 minutes.  I turned them over at about 20 minutes.  I especially liked the layers that had a little crunch to them! This was one green and one blue.

21 Day Fix Zucchini Lasagna

3 Large Zucchini
Grandma’s sauce (from Fixate cookbook) with ground beef
Mozzarella Cheese
2 Eggs
Cottage Cheese
Turkey Pepperoni (optional)

Make a mixture of eggs, cottage cheese and Mozzarella Cheese
Cut Zucchini into strips
Make Grandma’s Tomato Sauce with browned ground beef

Put a layer of the meat sauce, then a layer of zucchini, then a layer of meat sauce.

Put a layer of the mozzarella cheese/egg/Cottage cheese mix on top of that.
Cook in oven at 350 for 40 minutes.

Depending on how much you eat, you will use at least a green, blue, purple, and red.

Shakeology Saved Me Money!!

I have been doing the 21 Day Fix for about six weeks now.  I have lost about 12 pounds.  I have not been as strict as I was during my first round of the Fix, but I’m still losing weight and tightening up.  I am so happy with the changes that I’m seeing in my body!!

I am doing Shakeology with the Fix. The choice to use it was a no brainer for me.  Meal prepping is really hard on me. I’m not a cook.  If there are more than 5 ingredients in a recipe, I AM OUT!! Shakeology is one less meal that I have to prep, which makes me very happy!!  I actually save money by using Shakeology, too. Orange container of Flax Seed
Yellow container of steel cut oats
Teaspoon of almond butter
Orange container of Almond Milk
Blend and drink!

21 Day Fix Calabrese Salad

Not giving up the foods I like while doing 21 Day Fix lead me to losing TEN pounds!!! Unfortunately, I have a few more to lose, so I’m currently on my second round.  I found this DELICIOUS recipe in the Fixate Cookbook and ate it along with a steak. 21 Day Fix Zoodleghetti

Grandma Tomato Sauce from the FIXATE cookbook|
Browned Ground Beef (or turkey)
Zoodles (Zucchini noodles)

3 Greens
1 Red

Grandma’s Tomato Sauce


Pour the meat sauce over the zoodles and EAT!! YUM!!!

21 Day Fix approved Alfredo Zoodles with Shrimp

Ingredients for Alfredo Sauce

1 1/2 c 2% cottage cheese
1/2 c Parmesan, shredded
1 – 2 t garlic powder
1/2 t lemon pepper
4 T low fat milk


Add all ingredients to a small saucepan over super super low heat. Heat, stirring constantly, until hot and cheese has melted.

Carefully transfer to blender.
Blend smooth.
Pour over your favorite pasta.

Pour Alfredo Sauce over Zoodles (Zucchini noodles)

Add shrimp on top

21 Day Fix (per 1 cup serving)

1 red
1 blue

Great Tips
Add chicken instead of shrimp.

Add broccoli

21 Day Fix Turkey Taco Salad

This meal is a red, a blue and a green.  I added balsamic vinegar.  It’s free!!

First I browned the ground turkey.  I got the extra lean.

Then I added the taco seasonings.  I got the Ms. Dash no salt taco seasoning.

I poured the red container of taco meat on to a bed of lettuce. Then I added a blue cup of shredded cheese and about a teaspoon of balsamic vinegar.

This was a delicious salad for my dinner!! I didn’t have to give up taste to stay healthy!!!
